Purchased the 25 pound bag for the first time - five pound bags were easier to handle, but not a big deal.  I find the flour tends to clump more, which makes it a little more challenging in baking, particularly breads and quickbreads where the clumping can be a problem even after sifting.

Welcome back!

I had no idea you sold at 25 lb bags.  I was extremely excited to order it.  However, now that I've done the math, and there really isn't a cost benefit, I'll be going back order multiple 5 lb bags.

Wonderful gluten free flour September 30, 2018

Baking Free gluten free flour is the best I've found for cakes, cookies, pies, quick breads, coatings, and thickeners for cooking (pretty much everything except bread, which understandably requires more protein, and waffles/pancakes, which turn out better using a gum-free blend). I've been using it for years as my primary all-purpose gluten free flour. People tell me they would never have known that my baked goods were gluten free without me telling them! This flour has a good flavor (it doesn't have that bean undertone that many gluten free flours made with chickpeas have), it's finely ground (it isn't grainy like many rice-flour-based gluten free flours are), and it already contains the proper proportion of gums (no need to add xantham gum).

In converting regular recipes to gluten free using this flour, sometimes it's helpful to add a bit more liquid than the original recipe.
